Dosen Mengabdi IPB University, Webinar Penyembelihan dan Penanganan Hewan Kurban di Masa Pandemi
Hari raya Idul Adha sebentar lagi tiba, namun kondisi pandemi COVID-19 di Indonesia yang tak kunjung usai mengharuskan masyarakat menyesuaikan pelaksanaan ibadah kurban sesuai dengan protokol kesehatan yang lebih ketat . Kementerian Agama (Menag) pun telah mengeluarkan aturan yang tertuang dalam Surat Edaran Menag Nomor 17 Tahun 2021 tentang Peniadaan Sementara Peribadatan di Tempat Ibadah, Malam Takbiran, Shalat Idul Adha dan Petunjuk Teknis Pelaksanaan Kurban Tahun 1442 H di wilayah PPKM Darurat.
Dalam program Dosen Mengabdi, Halal Science Center (HSC) LPPM IPB menyelenggarakan webinar yang berjudul “Penyembelihan dan Penanganan Hewan Kurban di Masa Pandemi” untuk menyosialisasikan tata cara pnyembelihan hewan kurban diHari Raya Idul Adha di tahun ini. Meskipun masih dalam kondisi pandemi, tata cara pelaksanaan penyembelihan dan penanganan hewan kurban tetap harus dilakukan dengan mematuhi protokol kesehatan dan mengutamakan aspek kehalalan dan kethoyyiban. Kegiatan ini disiarkan melalui zoom dan kanal youtube HSC LPPM IPB, dihadiri oleh 205 orang peserta yang berasal dari dari seluruh wilayah Indonesia, yang sebagian besar merupakan anggota Dewan Kemakmuran Mesjid (DKM) dan panitia hewan kurban di wilayahnya masing-masing.
Kegiatan ini dibuka secara resmi oleh Prof.Dr.Ir. Khaswar Syamsu, MSc selaku Kepala Pusat HSC LPPM IPB dan Dr.rer.nat. Noviyan Darmawan,MSc selaku Sekretaris HSC LPPM IPB serta Ketua Pelaksana dalam kegiatan ini. “Saya sangat mendukung seluruh upaya pelaksanaan acara ini dan kami sangat mendukung acara tahunan ini terus berlanjut tanpa kehadiran sidak lapang, namun acara akan tetap berjalan dengan baik dengan melalui daring dan youtube untuk mencegah adanya penularan covid-19” tutur Prof.Dr.Ir. Khaswar Syamsu dalam sambutannya.
Dalam sambutannya, Dr. rer. nat. Noviyan Darmawan pun menyampaikan dukungannya terhadap pelaksanaan Kurban Idul Adha 1442 H. Beliau menuturkan bahwa Halal Science Center LPPM IPB akan mewakili IPB Universtiy akan terus mengawal pelaksanaan kurban di tahun 1442 H/2021 M dan akan terus menjawab kebutuhan masyarakat terkait cara penanganan hingga pengolahan daging.
Kegiatan ini menghadirkan narasumber yang kompeten di bidangnya, yaitu Drh. Supratikno selaku Kepala Divisi Penyembelihan Halal HSC dan dosen di Fakultas Kedokteran Hewan IPB, Dr. Ir. Joko Hermanianto selaku Advisor Halal Audit Service LPPOM MUI dan dosen di Fakultas Teknologi Pertanian IPB, dan Edit Lesa Aditia, SPt. M.Sc Anggota Divisi Penyembelihan Halal HSC dan dosen di Fakultas Peternakan IPB.
Narasumber pertama adalah Dr. Ir. Joko Hermanianto yang membawakan materi bertajuk Syariat Ibadah Kurban di masa pandemi. Dalam pemaparannya dijelaskan bahwa dalam syariat agama Islam, ibadah kurban adalah ibadah yang agung. Pelaksanaan ibadah kurban juga tidak bisa digantikan dengan ibadah lainnya seperti memberikan sumbangan melalui lembaga yang menyalurkan kepada masyarakat yang terdampak COVID-19, karena tidak memenuhi syarat berkurban. Beliau juga menyampaikan hukum menyembelih/berkurban, hukum bagi orang yang menyembelih hewan kurban, adab-adab berkurban dan syarat-syarat udhhiyahyang meliputi jenis hewan kurban, umur hewan, kesehatan hewan, dan waktu penyembelihan.
Narasumber kedua adalah Edit Lesa Aditia, SPt. MSc., yang membawakan materi bertajuk Pemilihan Ternak dan Estimasi Hasil Daging serta Penanganan Daging setelah Pemotongan Kurban. Materi ini menjelaskan secara rinci terkait tata cara pemilihan hewan kurban secara daring, perhitungan karkas daging, dan penanganan daging yang berpengaruh pada kualitas daging. Disampaikan bahwa idealnya sebuah daging dikonsumsi 1 – 2 hari setelah di potong, dan di simpan di dalam pendingin sebagai pengawetan daging.
Narasumber yang ketiga adalah Drh. Supratikno yang membawakan materi bertajuk Metode Penanganan dan Penyembelihan Hewan Kurban. Beliau menyebutkan ada tiga kunci utama dalam penyembelihan yakni lingkungan tempat penyembelihan, kompetensi petugas, dan peralatan yang sesuai. Selain itu, penyembelihan juga harus didasarkan pada 5 prinsip dalam kesejahteraan hewan di samping syariah Islam. Hal tersebut patut diingat karena manajemen stress pada hewan kurban akan mempengaruhi kualitas daging yang dihasilkan. Di masa pandemi, jumlah panitia dibatasi hanya orang orang yang kompeten dan jumlahnya disesuaikan dengan kapasitas pemotongan serta luas tempat kerja yang masih memungkinkan untuk saling menjaga jarak. Pada saat merebahkan hewan, petugas sulit untuk melakukan jaga jarak, oleh karena itu tim perebahan hewan harus menggunakan alat pelindung diri yang lebih lengkap dibandingkan petugas yang lain. Petugas yang terlibat dalam satu tim perebahan disarankan tidak melebihi lima orang. Kegiatan pemotongan hewan kurban dilakukan pada lokasi yang terbatas hanya untuk orang yang berkepentingan saja dengan tetap memperhatikan hygene dan sanitasi. Pembatasan jumlah panitia yang terlibat diharapkan akan membuat suasana tenang sehingga hewan tidak stress dan dapat mengurangi risiko penularan serta kontaminasi bakteri kepada daging. Pembagian daging juga disarankan dengan cara door to door kepada masyarakat yang menerima, untuk menghindari terjadinya kerumunan. Kegiatan ini di tutup secara resmi dengan penutupan dan pemberian sertifikat secara simbolis kepada narasumber, moderator dan peserta oleh Prof.Dr.Ir. Khaswar Syamsu. Beliau mengucapkan terimakasih kepada semua yang telah berpartisipasi dalam kegiatan ini. Harapannya program ini dapat memberikan edukasi terkait penyelenggaraan kurban pada hari raya Idul Adha Tahun 1442 H/ 2021 M, serta dapat membuka wawasan terkait langkah tepat dalam penyelenggaraan hari raya pada masa pandemi, sehingga menurunkan angka penularan virus COVID-19.
