HSC IPB University Buka Peluang Riset dan Magang di Bidang Halal Bagi Mahasiswa IPB

Halal Science Center (HSC), Lembaga Penelitian dan Pengabdian Kepada Masyarakat (LPPM) IPB University bekerja sama dengan Sekolah Pascasarjana IPB University menggelar webinar berjudul “Peluang Riset di Bidang Halal untuk Mahasiswa Pascasarjana IPB University”, pekan lalu. Sebagai cikal bakal Pusat Kajian Halal di Perguruan Tinggi pertama di Indonesia, HSC IPB University ingin mengenalkan kegiatan penelitian terkait bidang halal untuk mahasiswa. Terutama dengan adanya perhatian pemerintah akan status kehalalan produk serta untuk meningkatkan pemahaman masyarakat terkait kehalalan.

HSC telah menyusun tiga program Kampus Merdeka tahun 2021 yang didedikasikan untuk mahasiswa pascasarjana maupun vokasi. Tiga program tersebut yakni Program Mahasiswa Riset Terafiliasi HSC, Program Magang Bersertifikat dan Halal Thesis Prize 2021.
Bagi mahasiswa yang tertarik melakukan riset di bidang halal, berkesempatan untuk mendapatkan berbagai fasilitas dari HSC hingga mendapatkan pelatihan. Hasil riset tersebut nantinya tercatat dalam direktori riset halal IPB University.  Adapun topik yang diambil terkait bidang halal yakni bidang natural science maupun bidang social science dan humaniora.

Program Magang Bersertifikat HSC yang ditujukan bagi mahasiswa tingkat akhir juga memberikan kesempatan mendapatkan pengalaman yang berharga. Tak hanya mendapatkan pengalaman riset dan pengabdian masyarakat, mahasiswa juga mendapatkan berbagai fasilitas unggul.
 “Nantinya fasilitas yang didapatkan adalah sertifikat magang, uang saku selama magang, serta mendapatkan pelatihan dan uji kompetensi penyelia halal yang sangat dibutuhkan di dunia kerja. Jadi kalau anda lihat lowongan kerja berkaitan dengan industri makanan pasti dibutuhkan pengalaman terkait SJH (Sertifikasi Jaminan Halal),” ungkap Dr Noviyan Darmawan, Sekretaris HSC IPB University.

Dr Mala Nurilmala, Dosen IPB University dari Departemen Teknologi Hasil Perairan Fakultas Perikanan dan Ilmu Kelautan (THP-FPIK) menyebutkan mahasiswa dapat mengajukan topik riset di bidang inovasi produk halal terkait gelatin. Kebutuhan bahan gelatin di Indonesia untuk industri semakin meningkat dan sebagian besar mengandalkan impor. Bahan baku konvensional saat ini sebagian besar berasal dari kulit dan tulang mamalia terutama babi. Sebagai negara tropis, Indonesia memiliki keunggulan untuk mengembangkan hasil perikanan untuk pembuatan kolagen, gelatin, dan turunannya. Bahkan hasilnya mirip dengan karakteristik gelatin mamalia.  

Ia mengatakan bahwa gelatin ikan memberikan lebih banyak manfaat, contohnya peptidanya dapat berguna sebagai antikosidan. Hidrolisis protein yang berasal dari jeroan hasil perikanan juga dapat dimanfaatkan untuk menghasilkan berbagai enzim sehingga menarik untuk dijadikan riset.

Ketimpangan antara riset dan audit penetapan status halal juga menjadi permasalahan tersendiri. Dosen IPB University dari Departemen Ilmu dan Teknologi Pangan Fakultas Teknologi pertanian, Dr Nancy Dewi Yuliana menjelaskan, dengan pengembangan riset di bidang halal yang lebih terpadu, antara audit halal dan riset akan saling mendukung. Hal tersebut penting dikarenakan masih terdapat kelemahan pada proses audit halal.  
Topik riset autentikasi halal dapat terkait dengan penelusuran kehalalan suatu produk, misalnya daging, hingga proses produksi pangan dari segi bahan baku. Autentikasi halal dari segi bahan baku masih sangat kompleks sehingga peluang riset terbuka luas.

Maka dari itu, ia berharap mahasiswa dapat tergerak untuk memilih riset halal untuk tesisnya. Mahasiswa pascasarjana tentunya membutuhkan topik yang menarik untuk dipublikasi. Ia mencontohkan topik mengenai volatilomics terkait komponen volatil untuk autentikasi kehalalan. Dengan berbagai fasilitas di IPB University tentu riset dengan topik tersebut sangat memungkinkan.
